Soave Classico Doc Le Bine Longhe is expression of a 40 years old vine, at 150 meters altitude on a basaltic and clayish soil. This wine is produced from over ripped Garganega grapes, a 20 days late harvest which confer more structure and endurance. Wine ferment and is finish in stainless steel only.
“You will find a fruity component, hot, sunny, mature, recalling white peach, apple, exotic fruits and almond, then citrus fruit, honey and white flowers hints. The wine perception is full and rich but it keeps its freshness thnaks to its sapidity and minerality.”
Le Bine Longhe it’s therefore an enduring wine, to drink also after some years tasting the continuous evolution in the bottle.
L’Enosteria Wine Shop (Aprilia, Lazio) proposes the 2009 vintage, pairing it to a Cabbage and Cheese Roll on a Potato cream.
