Salmon escalopes with Soave Classico are a tasty main course to be prepared in just a few minutes.
Ingredients for 4 people
8 slices salmon
30 gr butter
2 sprigs fennel
1 teaspoon fennel seeds
1/2 glass Soave Classico
flour salt black pepper in grains to taste
1) Crush pepper together with 1 teaspoon of fennel seeds and sear in a pan with 30 grams of melted butter. Add 2 sprigs of fennel and leave to flavor for a few minutes.
2) Pass the 8 slices of salmon into the flour then add salt and cook in a pan for 3 minutes on high heat.
3) Sprinkle the slices of salmon with 1/2 glass of Soave Classico, cover and continue cooking for another 3 minutes. Serve, if you like, with a side dish of peas sautéed in butter.
