Grilled Goat with Polenta – Ristorante Tregnago 1908

Ingredients for 4

boneless goat 1 kg

fresh bacon 200 gr

lemon 1

lard 250 gr

garlic 2 cloves

rosemary, salt and pepper to taste

wine Soave Classico

polenta 500 gr

Preparation

Chop and mix together garlic, lemon’s peel, salt, pepper and salt. Open the goat meat and season it with the herbs mixture, lay the bacon and roll the goat. Dress up the meat with lard to protect it during the cooking. Tie it with food strings. Prepare the oven at 160° and place the meat for 30 minutes. Pour the Soave Classico wine on it and lei it finish the cooking. Once cooled, cut into 2 cm slices and grill them on embers. Serve it with grilled polenta and potatoes.
