Codfish with Potatoes, Olives and Capers

Ingredients for 4 people

240 gr. not salted codfish
n.4 big potatoes
n.2 spoons of salted capers
n.2 spoons of marinated oil
n.4 marinated anchovies
e.v.o. oil
salt, pepper


Peel the potatoes, cut them in cubes and boil them in salted hot water. Drain them and keep them warm. Mince capers and olives together. Blend the anchovies with 4 spoons of oil until you obtain a dense sauce. Steam cook the codfish for 10 minutes. Season the potatoes with oil, pepper and salt and mix them with capers and olives. Compact the potatoes in a coppa-pasta, the codfish and season with anchovies oil and minced parsley.
