Beef Tenderloin with Vegetables julienne


2 beef filets (200 g each)

half red pepper

1 carrot

1 courgette

half lemon juice

oil, salt and pepper

Take the filet, remove the fat parts and sear it on a hot grille brushed with olive oil. Cook for some minutes both beef’s sides and close it in tinfoil to keep it warm.
Wash the vegetables, cut them julienne and put them in a bowl. Emulsify the lemon juice with 4 spoons of oil, salt and pepper.
Season the vegetables with this sauce, serve the filet in the dish and garnish with the vegetables. You can also add roast potatoes.
Enjoy the meal with a glass of Bine Longhe Soave Classico.
