• 400 g fresh anchovies
• 4/5 tomatoes
To prepare the baked anchovies first clean them removing head, fish bone and interior. Wash the anchovies and dry them well.
Place them in a deep baking pan with extra virgin olive oil. The anchovies must be arranged in a compact and compact manner. Add salt and pepper.
Wet the anchovies with 200 dl of wine, do not overdo it with the wine to get a tasty, dry and crispy result. Cover it completely with breadcrumbs and chopped parsley and garlic. Put some tomatoes cut in half on the anchovies.
Finish with extra virgin olive oil and bake at 180 ° for 30 minutes. Baked anchovies must be dry and well golden.
