Avus Garganega Sur Lie and Gnocchi with Radicchio

How to resist in front of a nice plate of steaming dumplings and creamy dressing? These fragrant gnocchi with radicchio and saffron are a first course that children always like and that you can cook and serve in 30 minutes!

• 1 kg of potato gnocchi

• 1 head of radicchio

• 1 sachet of saffron

• 50 g of parmesan

•2 tablespoons of cream

• butter , oil, salt

1) For the gnocchi just a few minutes of cooking. Start preparing the seasoning of the gnocchi with radicchio and saffron, in a pan, heat two tablespoons of oil with a knob of butter and let the radicchio wither into strips. Add the cream, saffron diluted in warm water, salt and cook for 20 minutes.

2) Boil the gnocchi, drain, pass them in the saucepan and sauté half a minute over high heat. Transfer the gnocchi to the radicchio and saffron on the serving dish, sprinkle with the Parmesan cheese.
